For as long as I can remember, my mum cooks special meals for the house on mother’s day and refuses help from anyone while at it. This year, I thought it was time for a change, thankfully my God mother was also around…no mummy in the kitchen day!

Starter; Lemon & Maple Syrup glazed ham wrapped cocktail sausages
The tangy lemony feel to this juicy bite was everything. Finger licking good!
Main; Couscous Stir- Fry
One-pot Beef, vegetables and couscous stir-fry! So I had couscous for the first time ever some time this year when my cousin Muna made me try it (will be sharing her recipe soon) and I thought it wasn’t bad at all. Fast forward to mother’s day menu planning with my friend Sandra and cousin Uche & we decided couscous would be a pleasant surprise…yes it was a pleasant surprise!
Last; Strawberries & cream
Both mothers are not big on extra sweet desserts so this seemed like the perfect choice. They were happy and thankful for the experience *big smile* mission accomplished!
