With all the hype on Japanese pancakes all over social media, I had to join the trend 😬 After two failed attempts and a thousand youtube videos, I finally got it right! Sometime last week, my mum requested for pancakes and it was a work free day for me so I felt it was the perfect time to showcase my new found love….Japanese pancakes! I wanted to go all out so I had to make a topping, thankfully I had some plum in the refrigerator. This combo was so good, I have to share the recipe with you…
Yield: Serves 2
Tool: Ring mold/ mini cake pan (found in baking section of supermarkets)
Ingredients
2 large eggs
1/4 cup sugar
1/2 cup milk
1 cup pancake mix
1/2 stick butter
1 teaspoon baking powder
2 Tablespoons vegetable oil
Topping
3 plums
5 Tablespoons water
2 Tablespoons Maple syrup
1 Tablespoon sugar
Method
- Blend eggs, butter, milk & sugar on low speed for 10secs
- Add baking powder & pancake mix and blend till well combined (About 20 secs)
- Heat frying pan over medium-low heat
- Grease frying pan & ring mold/ mini cake pan with vegetable oil
- Place mold in centre of frying pan & pour in pancake batter till half full
- Cover frying pan and leave to cook till bubbles form on top (About 5mins)
- Gently flip mold with pancake over to the other side (You might need to tilt frying pan while flipping)
- Cover & cook till bottom is golden brown (About 5mins)
- Also make sure the inside is no longer runny then transfer to plate
Topping
- Over medium-high heat, dissolve sugar in water in a saucepan
- Add maple syrup & sliced plum
- Stir till thick
- Pour over pancakes
- Serve hot
And yes they are worth all the hype…felt like a beautiful combination of muffins and pancakes!
