The kind of stares I get when people hear I do not like corn inspired this recipe. There had to be some way to enjoy corn without actually biting and chewing as the whole process hurts my eyes and believe me, this is one of those ways….
RECIPE
Yield: Serves 4
Ingredients
- 1 Tin sweet corn drained
- 1 Handful prawns
- 1 cup water
- 1 garlic minced
- 1/2 cup olive oil
- Juice of 1 Lemon
- 1 Lemon quatered
- 1 pack Pasta
- 1 Tablespoon tomato paste
- Salt & Black Pepper to taste
- 1 Handful cherry tomatoes
- 1 Tablespoon spring onions
METHOD
- Purée sweet corn in blender with olive oil and lemon juice until smooth
- Cook pasta in salted boiling water
- In a medium saucepan, cook puréed corn with tomato paste, garlic, salt and black pepper
- Throw in prawns and cook till desired
- Adjust thickness with water
ASSEMBLY
- Ladle corn sauce into soup bowl
- Toss in pasta
- Top with prawns, spring onions and cherry tomatoes
- Serve hot with quartered lemon
