When hunger slapped me the other day, my cravings detector was reset! (Yes, hunger slaps me *rolls eyes*.) From nowhere, I wanted some fried plantain egg based dish I had been seeing on blogs and shows (Dodo Frittata).
In my opinion, dodo frittata is a lot of eggs and not a lot of dodo. But as an experienced Nigerian foodie, I believe it should be the other way around. So I got in my head and painted a picture of what I wanted my version to look like and it was a really thin layer of eggs, dodo and fries as filling then strawberries as topping. I might as well be extra since it took me this long to want it. Turned out to be a beautiful yummy plate with the perfect valentine look and the best part….super easy to make!
NOT YOUR USUAL RECIPE
You will need eggs, ripe plantains, potato chips and bell peppers….strawberries, vegetable oil, butter, salt, black pepper and oregano. (You can always substitute with any vegetable, herb or fruit of your choice.)
First slice peeled plantains and bell peppers.
Fry plantains and set aside.
Fry chips and set aside.
Mix eggs with salt, black pepper and oregano.
Grease pan with butter and stir-fry bell peppers.
Place frying pan over low heat, pour in egg mix and arrange dodo, fries and bell peppers like so.
Cover and leave to cook for about 10mins or until set.
Finish up with slices of strawberries and curls of butter. Leave butter to melt for about 20secs then turn off heat.Serve immediately.
